Red Ruby Dessert

waterchestnuts - cut into small cubes
red food colouring
1/2 cup of tapioca flour

1/2 cup of sugar
1/2 cup of water
1 small pkt of Kara coconut milk or 1 cup of freshly squeezed coconut milk
a tiny pinch of salt

Method:

* Put cut up waterchestnut cubes in a bowl. Mix in a drop or 2 of the red colouring and stir well to let the cubes absorb the colour.

* Put the tapioca flour in a bag. Then add in the red chestnut cubes into bag and shake well to get all coated with the flour.

* Bring a small saucepan of water to a boil. Put the coated cubes into a sieve and dust off excess flour. Quickly, put the coated cubes in the hot water and let it cook till you see a 'transparent' coating on the cubes.

* Prepare a big bowl of cold water with some ice-cubes. Strain the cooked cubes on a sieve and immediately put it into the bowl of ice-cold water.

* Boil the 1/2 cup of water + 1/2 cup of sugar to a syrup. Turn off the fire. Add in the coconut milk and the tiny pinch of salt. Stir the mixture. Allow to cool.

* Drain off the cold water from the cooked cubes. Put the red-rubies in a container.

* To serve, put a couple of spoonful of red rubies in a bowl, add in the coconut milk and topped with crushed ices/ice-cubes.
