HOW TO MAKE DASHI (Basic Stock)

Your Dashi can be used for many Japanese dishes such as Miso Soup, Chawan Mushi, Soba/Udon Soup, Pot Dishes, Braised Dishes and many more dishes .

For 1000ml of Dashi

Ingredients:

1000ml Water
20g Konbu (Kelp)
20-30g Kezuribushi (Bonito Flakes)


Method:

  1. Wipe konbu (kelp) lightly with a well-wrung damp cloth to clean.
  2. Place water and konbu in a soup pot over medium heat. Remove konbu just before water reach a boil.
  3. Add a little water (50ml) to keep from boiling.
  4. Add kezuribushi. When the water boils, remove it from heat at once.
  5. Skim the surface to remove foam.
  6. When kezuribushi sinks to the bottom, strain through a cheesecloth-lined at once.
