Chawanmushi

Ingredients:

6 small fresh shrimp (peeled) / or artifical crab meat
4 eggs
1.5 can (= 15 ounce) of chick broth (or 3 cups)
1.5 tsp soy sauce
1/2 chicken breast (deboned and diced)
6 shitake mushroom (softened and sliced)
1 tablespoon chopped scallions

Methods:

  1. In a bowl, beat eggs lightly and add chicken broth and soy sauce. Skim foam from surface with a spoon.
  2. Divide chicken, shrimp, mushroom among 6 small heat-resistant cups.
  3. Pour soup and egg mixture over meat and vegetables to cover.
  4. Garnish each cup with a few scallions.
  5. If you have a steamer, steam the egg cups for 25 min over medium heat.
